Autumn Apple Cakes for Cooler Days

Why Bramleys Earn Their Place in Autumn Baking

By late September, the Bramley crop is in, and there is no better apple for a cake. Bramleys are sharp, bracingly acidic and soften to a fluffy purée when cooked, which is exactly why they work so well in a batter: instead of sitting in the crumb like hard little pebbles, they collapse into it and lend moisture, tang and perfume. A dessert apple baked in a cake too often turns bland and watery; a Bramley keeps the whole thing tasting of apples.

Choose fruit that is firm and heavy for its size, with tight, unbroken skin. Windfalls are fine for stewing, but check carefully for bruising, because a soft brown patch will taint the flavour of the whole cake. Bramleys keep well in a cool, dark place; for baking, use them within a fortnight of picking.

Balancing Sharpness with Brown Sugar and Warm Spice

The trick with Bramleys is to sweeten generously without burying the acidity. Brown sugars do this better than white: light muscovado brings a faint treacle note, soft dark brown sugar is richer still, and demerara scattered over the top gives a crackling crust. As a rule of thumb, for every 200g of flour use about 175g of light muscovado — and taste the raw batter. It should be a touch sweeter than you think necessary, since baking mutes sweetness.

Spices should warm rather than shout. Ground cinnamon is the natural partner, at roughly 1–2 teaspoons per cake, with half a teaspoon of mixed spice for depth. Freshly grated nutmeg is worth the effort; a few scrapes go a long way. Ground ginger lifts apple beautifully, and cloves should be used in pinches, not spoons. A good pinch of fine salt and a teaspoon of vanilla extract round everything off.

  • For 200g flour: 175g light muscovado, 1½ tsp ground cinnamon, ½ tsp mixed spice, pinch of salt
  • For extra depth: 1 tbsp black treacle stirred into the melted butter
  • To sharpen the balance: a squeeze of lemon juice over the grated apple

A Dependable Apple and Cinnamon Traybake

This is the cake I make most in October, and it feeds a crowd from one tin. Heat the oven to 180°C (160°C fan, gas 4) and line a 23cm x 30cm traybake tin with greaseproof paper.

Melt 200g unsalted butter and leave it to cool slightly. In a large bowl whisk 225g self-raising flour, 1 tsp baking powder, 2 tsp ground cinnamon and 175g light muscovado, breaking up any lumps. Beat in 3 large eggs, the melted butter and 2 tbsp milk until smooth. Peel, core and coarsely grate 350g Bramley apples — about two large ones — and fold them through with 100g sultanas if you like. Spread into the tin, level the top, and scatter over a tablespoon each of demerara sugar and cinnamon.

Bake for 30–35 minutes, until the top springs back and a skewer comes out clean. Cool in the tin for ten minutes, then lift out onto a rack and cut into squares while barely warm.

Muffins, Loaves and Little Cakes

The same principles scale down neatly. For muffins, use a light hand: fold the wet ingredients into the dry until just combined, lumps and all, and bake at 200°C (180°C fan, gas 6) for 20–25 minutes. Apple and oat muffins, with 50g porridge oats replacing some of the flour, are excellent with a spoonful of honey in the batter.

A 2lb loaf tin takes the traybake mixture above and needs 50–55 minutes; tent it loosely with foil after 35 minutes if the top is browning too fast. Little apple and almond cakes — ground almonds in place of a quarter of the flour — bake in about 12 minutes in a bun tin, and are lovely with a glacé icing and a pinch of cinnamon.

Avoiding Soggy Bottoms and Pale Crumbs

Apple cakes fail in two ways: a damp base or a raw centre, and both are avoidable. Grated Bramley releases a lot of juice, so toss it with a tablespoon of the measured flour before folding in, and resist adding extra liquid to the batter. Butter should be melted but not hot, and eggs at room temperature. If your tin is old and thin, double it or use a sturdy one; a flimsy tin will scorch the edges before the middle sets.

Always test with a skewer pushed into the centre — it should emerge with no wet crumb. Cool in the tin briefly, then move to a rack so the base does not steam itself soggy.

Storing, Freezing and Serving

An apple cake is better on the second day, once the spices have settled. Keep it in an airtight tin for three to four days, or freeze slices wrapped individually for up to three months and thaw at room temperature. Warm a slice gently and serve with custard, a spoonful of crème fraîche, or vanilla ice cream. A drizzle of warm toffee sauce turns a traybake square into a proper pudding, which is, after all, what autumn asks for.
